Given the context, yes, because the idea was expressed to refer to a general, abstract patient. After all, both women and men would die if they didn't drink water for a number of days :D

Doctors would say "un paciente" for a specific male patient (without specifying who) and "una paciente" for a specific female patient: "tengo un/una paciente en condiciones muy graves," for example.
