The sentence with "so viel" wouldn't make any sense.

"Etwas so viel mögen" doesn't exist. You say "etwas so sehr mögen"

Yes, I would think so, at least it feels absolutely wrong for me.

But I find it quite hard to detect a pattern with viel/sehr as an adverb referring to a verb.

Maybe it is about frequency ("Ich lese viel") versus degree ("Ich mag dich sehr")?

Ouch, I stumbled into an article that contains at least two errors:

"Sie liebt ihn sehr viel" is awful (you can use "sehr viel", but not in this sentence), and "Sie erwartet sehr auf deine Rückkehr" isn't any better, though unrelated to sehr vs viel. Results from Thoughtco often popped up when I was looking for some Spanish expressions, but I wonder how trustworthy their advice really is?

There is one case where viel and sehr can be used as synonyms, according to the Duden, and that is together with a past participle: ein viel / sehr geliebtes Kind, eine viel / sehr erfahrene Hebamme, ein viel / sehr umworbener Star etc. (https://www.duden.de/rechtschreibung/vi ... wesentlich)
