We don't use the expression "soulier de Noël" in France. However "soulier" is an old word for shoe, and in the french tradition, the day before christmas, the children let a "soulier" near the chimney or christmas tree, to get their present. (see for example the song "petit papa Noël" where it's said "n'oublie pas mon petit soulier"). Regarding Christmas stocking, it is used (nowadays) as a decoration and the translation would be "chaussette de Noël".

I'm a little more familiar with Canadian French for things like this and I've heard the term "un bas de Noël" (mostly from our bilingual products in stores) and French classes that taught partial Québec terminology and partial France terminology. However, I understand that this is mostly a regional thing.
Although, the word "soulier" here means something more close to "sneaker" and I've heard that it is a more old-fashioned term in France. Which is why I inquire about it since I wonder if this is just an interesting preservation of the word in France? Although I think of it more of a shoe than a stocking which I find strange.
I tried translating the term on my go-to online dictionary to verify it and found "une chaussette de Noël" which is obviously a more literal translation of "a stocking of Christmas," but I still wonder if this is just a weird translation thing. I'm currently just imagining French people receiving Christmas gifts in sneakers now and I'm very confused. Someone please help clarify this confusion and give me some cultural insight into this particular word.

This is off the top of my head. I am happy to make more lists like this and to make them more formal, to find the International French terms, to make them alphabetized in English and/or French, and to make the masculine and feminine lists separate. I am particularly keen in adding words that are not (yet) covered in the French Duolingo course.
By "windbreak" i mean the things people put up on the beach to keep the breeze off when sunbathing (picture). I think it's coupe-vent or paravent in French? I'm not even sure if "windbreak" is the normal word in English now you mention it.
And i meant this "test of courage" which is apparently just "test de courage" in French.
But yes, some of those words were already in the French tree/stories, you're right.
