Why do trees have a different new year than people?

Because that's when they start to blossom.

Is that worldwide per hemisphere or just in Israel that the day is accurate? I mean don't different trees blossom at different times?

I guess it's just in Israel. In the southern hemisphere it's obviously the opposite season, and in more northern countries the blossom starts later.
The day is not accurate, and of course different trees blossom at different times. The almond tree is famous for being the first to blossom around mid February, which is the time of ט"ו בשבט. Most trees blossom later.
