"La" is the definite article, in Esperanto it is generally used to stress that the following noun is not something general but something that was already mentionned or is already known.
In this sentence, "apetito" is already sufficiently defined by "mia". It's not appetite in general, it's about my appetite, so a supplementary precision by a definite article is completely useless.
With "la", try to keep it simple, use it only when it adds a precision, not because there is one (or something similar) in your native language.
