In other languages this might be a relevant translation. Why is this wrong in Spanish?

Also - in the same exercise "one man" for 'un hombré' was accepted:

I think they didn't add it to the solutions as there are hardly any situations in which this might make sense.

Your second example with the man is different as it has even less context, and e.g. I see one man in contrast to I see two men is something reasonable to say.

I think this should be accepted as an alternative answer — you can report it to Duolingo under "my answer should have been accepted".

Still, even if not technically wrong, it's a little awkward as a translation. If trying to emphasize the one-ness rather than the woman-ness, you'd typically add another word, e.g. "yo soy solo una mujer"/"I'm just one woman"

well that doesn't make sense i am a woman is plain yo soy una mujer
and i have also heard soy una mujer

Like [mention]Cifi[/mention] noted, context is key.

Un/una means "one" in some contents, and "a" in others. As a reader, you have to choose which one makes sense in the given context. "I am one woman" just does not sound like a correct sentence in English.
