In characters I learnt the word תפוד for potato. Is that a contraction of תפוח אדמה? Like taters instead of potatoes.

Yes, but it's formal and hardly ever used. You can often see the initials תפ"א in writing, but in speaking you have to pronounce the whole 2 words.
