I suggest that you add some standard subforums to all languages and when a Moderator is assigned on them, they could make any modifications they think are necessary. Personally, I like the "Language - Culture & Society - Resources - Practice" structure.

I suggest you add the Greek keyboard as soon as possible, because you'll need to write Greek sentences in level 2, if not sooner. I agree that general discussions in one's target language should be allowed in a sub-forum. Discussions about the country and the culture (arts, tradition and customs etc.), "harmless" chit-chatting about hobbies and even language games! No one will learn a language just by studying gramma...
